Vinification

Manual harvests in baskets, bunches are sorted on arrival at the
cellars, then de-stemmed. Throughout the vatting process (30 days)
we carry out the processes of pumping, with or without aeration
as well punching of the cap, on a daily basis. The temperature
is kept at between 27 and 30°C.
Aging : On sediment, in vats.

This cuvee is meant as a tribute to the work carried out by our
parents, and to their passion. It is thanks to them, that today
we can work the Carignan vines. As the original grape variety
of our appellation, Carignan is a testament to the terroir, creating
wine with a striking character. With notes of blackberry fruits
and blackcurrant flavours, Nos Racines combines concentration
and freshness with soft tannins.
