Vinification
:
Handpicked harvest in crates, sorted afterwards in the cellar
and then destemmed. During the entire vatting period (30-40 days),
operations are carried out on a daily basis : pumping over with
or without airing, punching of the cap. The temperature is maintained
between 27 and 30°C.
Maturing : By grape varieties,
in 225-litre barrels for a minimum of 12 months, followed by 8
months in stainless steel vats.
Tasting
notes :
In the local dialect "Tucade" is a whim, an extravagance, and
is more or less the story of this wine. 2001 is its first vintage.
This rich and complex wine retains all of the finesse of its terroir.
Tucade will only be produced during exceptional years.
Ageing
:
An ageworthy wine, to be kept for at least 10 years !
Food
pairing :
Will be perfect with top quality red meat, roast hare or stew,
or certain cheese such as Laguiole, Salers or mature Cantal.
